Mix together:
3 15-oz cans refried beans
1/2 c. salsa
3/4 c. shredded Monterrey jack or other cheese
Heat in the microwave (or oven or stovetop) and spread into a 9x13 cake pan.
Brown 2 lbs. taco meat from a Mexican grocery store in a skillet with a little oil. Season well with Adobo seasoning or whatever you prefer. This taco meat is like diced carne asada. Not sure what cut it is, but if you can't find it, you can chop up steak or use ground beef. Brown the meat on high heat until it is sizzling and looks dark brown, like the carne asada in a street taco. :)
Layer the meat on top of the beans, then 1/2 to 1 cup chopped white onion on top of that, and then a bunch of chopped cilantro. Serve with limes for sure, and maybe some creamy chipotle salsa. And tortilla chips!
This makes a lot of dip, but you could probably use one can of beans and cut the other amounts in half and put it in a 9x9 pan instead.
